Ingredients: 20-24 shrimp (pre cooked frozen) 2 sevings of brown rice pasta, according to the box, or a bit less if you are watching your carb intake (I purchase brands containing only whole grain brown rice, rice bran and water) 1/4 cup chopped Red bell pepper Handful chopped Onion 1 small Garlic clove, finely chopped 3 tbspn olive oil 1-1.5 tbspn lemon juice 2 tbspn water Dash salt Dash pepper Dash oregano
Cook shrimp in fry pan on stove top (no oil should be needed) until done Cook brown rice pasta on stove top as directed on package In a small pot put water, olive oil, lemon juice, salt, pepper and oregano in and set on low heat. After about 3 minutes add garlic. Stir. After another 3 minutes add onion and red pepper. Stir, and cook for 5 minutes.
When pasta is finished divide on to 2 plates. When shrimp is done drain any excess water and place on top of pasta. Then, divide sauce and veggies over the top
