As part of my Bootcamps, we make recipe books by modifying original recipes to make them more nutritious. Any requests? I know my low-fat/high fiber spinach dip has been a hit with some of the people i"ve made diet plans for. Also, if you have any good ones, feel free to post 'em. Dieting does NOT have to be boring or make you feel deprived!

I know my low-fat/high fiber spinach dip has been a hit with some of the people i"ve made diet plans for. What is the recipe for the spinach dip? Would you use something like celery with the dip?

Spinach Dip:
2 packs frozen chopped Spinach 2 16-Oz tubs Light sour cream 2 TBS Light Mayo 1 package Knorr Dry Vegetable Soup Mix
Thraw and drain the spinach, squeezing out as much water as you can. Add all ingredients in a bowl and mix well- dip should be thick, not runny. I like a lot of flavor, so i add 2 packets of soup mix! *Also, you can look for whole-wheat carb conscious tortillas (i use mission brand) and bake them til crispy to use as "chips" for the dip. carrot or celery sticks work fine too! ~MINX

Thanks for the recipe. The tortillas sound good to me also. I will look for that brand in the store. I need to eat more things like spinach and this looks like a tasty way to do it.
